Cream of Tartar


While many fruits naturally produce it, the cream of tartar that we usually have in our kitchens is collected from wine casks developed in the form of crystals from fermenting grapes during the production of wine.

A white, acidic, and odorless powder, cream of tartar is used to prevent sugary sweets and syrups from crystallizing, increase the heat tolerance of egg whites, and stabilize whipping cream.
