The sweetest of dried peppers, with deep, rich berry flavors, mild bitterness, and mild to medium hotness, Ancho is frequently used as the base flavor of sauce and spice mixes like dry rubs or mole. I make my salad dressings in a single batch rather than following the recipe given by Local Spicery. I use about 2TBL olive oil and 2TBL vinegar (your choice – this spice has worked really well with red wine and balsamic but I’m sure would be delicious with your favorite) and 1/4 tsp of the Medici Italian Seasoning, not reconstituted. It is delicious. My husband loves it and when I serve it to company they all ask me where I got the salad dressing. It takes about two minutes to whip this up and it is delicious!
