Vegan Horchata – Date Sweetened

 

Ingredients:

3/4 cup long grain white rice

2 cups hot water (for soaking)

4 cups cold water

5-7 Medjool dates

1 tsp Ceylon Cinnamon

1/2 tsp Ground Vanilla

1 cup unsweetened plant milk

 

 

Preparation:

Soak the rice and 2 cups hot water in a bowl for 2 hours. Then drain the rice using a fine sieve.

 

Using a high-powered blender, add:  rice, 4 cups cold water, pitted dates, cinnamon and ground vanilla. Blend until rice is well combined with water.

 

Pour through a fine mesh strainer into a pitcher. Add 1 cup of unsweetened plant milk, cover and chill.

 

Pour over glass of ice, dust the top with cinnamon and serve.  Enjoy!

 

Note:  There will be sediment in the bottom of the container.
