This recipe makes a batch of soft, sweet, nutty cookies with an amazing texture. It’s almost like a cinnamon roll in cookie form, between the dates and the brown sugar. These pinwheels are decadent, but also carry that natural, fruity, date flavor, keeping them from being cloyingly sweet. Darien’s Date-Nut Pinwheels
Ingredients:
- 1 cup softened butter
- 2 cups brown sugar
- 3 eggs
- 4 ½ cups flour
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
- 7.5 oz dates, chopped
- ½ cup sugar
- ½ cup water
- 1 cup walnuts, finely chopped
Preparation:
- Cook the dates, ½ cup sugar, ½ cup water, and walnuts over low heat and let cool. Cream butter, sugar, and eggs. Sift dry ingredients and add to the butter, sugar, and eggs. Mix thoroughly and chill the dough.
- Once chilled, divide dough in half and roll out each half on a floured board into a rectangular shape 1/4″ thick. Spread with the cooled filling and roll up tightly length-wise. Wrap rolls in waxed paper and refrigerate.
- Slice and bake in preheated 375ºF oven for 12-15 minutes.
