A fantastic twist on traditional! The cardamom brings out the natural flavor of the apple butter while the cinnamon perfectly complements the oats. If you’re looking for something with even more of a twist, try swapping 2 teaspoons of our Moroccan Breakfast Spice for the spices called for, and dried chopped dates for the raisins.
Ingredients:
- ¾ cup apple butter
- 2 tbsp canola oil
- 1 egg
- 2 tsp vanilla
- ¾ cup packed brown sugar
- ¾ cup chopped raisins (optional)
- 1 ½ cup unbleached flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- 2 cups rolled oats
Preparation:
- Preheat oven to 350ºF. Line baking sheet with parchment paper. In large bowl, mix together apple butter, oil, egg, vanilla, and brown sugar until smooth. Stir in raisins.
- In separate bowl, mix flour, baking soda, salt, cinnamon, and cardamom together. Stir in the oats. Add the dry ingredients to the wet ingredients and mix until well-blended.
- Drop the batter by the tablespoonful about 3 inches apart onto the baking sheet. Bake for about 15 minutes, until lightly browned. Transfer to wire rack to cool. Yields about 48 cookies.
