Rum Spice Cookies

Allspice brings out the warmth and complexity of these cookies, making for a wonderful winter treat.


  • ¾ cup butter, softened
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp + ¾ tsp ground allspice
  • 1 egg
  • ¼ cup honey
  • 3 tbsp dark rum
  • 2 2/3 cup flour
  • 1/3 cup granulated sugar


  1. In a large mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, baking soda, and ½ tsp allspice; beat until combined. Beat in egg, honey, and rum. Beat in as much of the flour as you can with the mixer, stir in remaining flour with a wooden spoon. Divide the dough in half. Cover and chill for one hour.
  2. Preheat oven to 375ºF. Cut the dough into ¼ inch thick slices. Place about 2 inches apart on lightly greased baking sheets and sprinkle with reserved sugar and allspice. Bake for 8-10 minutes, or until the edges are firm and bottoms are lightly brown. Cool on a wire rack. Yields about 64 cookies.
