Tkemali (Georgian Plum Sauce)

Perfect for vegetables, grilled proteins and salad dressings ~ fruity, sour, aromatic and flavorful. Khmeli Suneli is the star of this recipe!
2.2 lbs ripe red plums
½C water
3-4 large cloves garlic, minced
1 small chile pepper, minced
5T chopped fresh cilantro
3t dill
1T tarragon (or Fines Herbes)
2t chopped fresh mint
2/3t coriander, milled
2t Khmeli Suneli
2/3t black pepper, ground
2t lemon juice
3T pomegranate juice
Cut plums in quarters, remove stones and place in pot with water. Bring to a boil over medium heat and simmer for approximately 15 minutes, stirring occasionally. When plums are soft, drain. With a wooden spoon, rub plums through a sieve in the same pot, removing skin and pulp. Add the rest of the ingredients and mix well. Simmer for 5 min. Let cool and refrigerate until use. Enjoy!
