Garam Masala Lentils (WFPB SOS Free)

Ingredients:

1  Onion, chopped

1 Carrot, diced

3/4 cup  Peas (I used frozen)

2 cups Brown Lentils

2T  Local Spicery Garam Masala

2 cups  Veggie Broth, salt-free (I used 2 T Bada Bing with 2 cups boiling water)

1 can Diced Tomatoes

 

Directions:

Soak lentils in water while pulling ingredients together and chopping veggies (about 15 minutes).  Sauté onion over medium heat. When the onion begins to turn a little brown, add a splash of veggie broth and the Garam Masala. Stir continuously as the broth evaporates and the onion is coated with spice.  Drain lentils and add to onion. Stir in about a cup of veggie broth, carrots and peas.  Add diced tomatoes (use fresh or canned). Stir until well mixed.  Stir in the rest of the broth.  Once the mixture reaches a simmer again, turn the heat to medium low.  Continue to simmer until lentils are cooked the way you like them (I let them simmer for 30 or 45 minutes), adding broth or water as needed.
