Ingredients:
- 1 cup softened butter
- 2/3 cup packed brown sugar
- 1 tsp ground ginger
- ½ tsp baking soda
- ½ cup molasses
- 1/3 cup milk
- 3 ½ cups flour
Preparation:
- In large mixing bowl, beat butter on medium high speed for 30 seconds. Add brown sugar, ginger, and baking soda; beat until combined. Beat in molasses and milk.
- Beat in as much flour as you can with the mixer, stir in any remaining flour with wooden spoon. Divide dough in half. Cover and chill for 3 hours, or until easy to handle.
- Preheat oven to 375ºF. On lightly floured surface, roll out each half of dough of ¼ inch thickness. Using a 2-inch star cutter, cut dough into star shapes. Place cookies 1 inch apart on greased baking sheets. Bake for 7-9 minutes, or until edges are firm. Remove cookies and cool on a rack. Yields about 60 cookies.
