Ginger Molasses Stars

  • 1 cup softened butter
  • 2/3 cup packed brown sugar
  • 1 tsp ground ginger
  • ½ tsp baking soda
  • ½ cup molasses
  • 1/3 cup milk
  • 3 ½ cups flour

  1. In large mixing bowl, beat butter on medium high speed for 30 seconds. Add brown sugar, ginger, and baking soda; beat until combined. Beat in molasses and milk.
  2. Beat in as much flour as you can with the mixer, stir in any remaining flour with wooden spoon. Divide dough in half. Cover and chill for 3 hours, or until easy to handle.
  3. Preheat oven to 375ºF. On lightly floured surface, roll out each half of dough of ¼ inch thickness. Using a 2-inch star cutter, cut dough into star shapes. Place cookies 1 inch apart on greased baking sheets. Bake for 7-9 minutes, or until edges are firm. Remove cookies and cool on a rack. Yields about 60 cookies.
