Ingredients:
- 1 cup sugar
- ½ cup brown sugar, firmly packed
- ¼ cup margarine
- 2 tbsp water
- 1 tsp vanilla
- 2 eggs
- 3 cups flour
- ½ tsp salt
- 1 tsp baking soda
- 3 packages of Andes Mints
- 60 almonds or walnuts
Preparation:
- Combine sugar, brown sugar, margarine, water, vanilla, and eggs until well blended. In medium bowl, combine flour, baking soda, and salt. Add to sugar mixture; mix on low until well-blended. Cover and refrigerate 2 hours.
- Preheat oven to 375ºF. Press 1 tbsp of dough around mint. Cover completely and place two inches apart on ungreased cookie sheet. Top each with an almond or walnut.
- Bake for 7-9 minutes. Remove immediately.
