Janet’s Chocolate Mint Surprise


  • 1 cup sugar
  • ½ cup brown sugar, firmly packed
  • ¼ cup margarine
  • 2 tbsp water
  • 1 tsp vanilla
  • 2 eggs
  • 3 cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 3 packages of Andes Mints
  • 60 almonds or walnuts


  1. Combine sugar, brown sugar, margarine, water, vanilla, and eggs until well blended. In medium bowl, combine flour, baking soda, and salt. Add to sugar mixture; mix on low until well-blended. Cover and refrigerate 2 hours.
  2. Preheat oven to 375ºF. Press 1 tbsp of dough around mint. Cover completely and place two inches apart on ungreased cookie sheet. Top each with an almond or walnut.
  3. Bake for 7-9 minutes. Remove immediately.
