Moist, yummy bar cookies with that scrumptious fall flavor.
1½C All Purpose Flour
1C Packed Brown Sugar
2t Baking Powder
¼t Baking Soda
½C Cooking Oil
Preheat oven to 350º. In a large mixing bowl stir together flour, brown sugar, granulated sugar, baking powder, baking soda, pumpkin pie spice, and salt.
In another mixing bowl beat the eggs slightly. Stir in pumpkin, raisins, and oil. Stir pumpkin mixture into flour mixture.
Spread batter into ungreased 15×10 baking pan and bake in preheated oven for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a rack.
